Pecan pie gingerbread cookies

These were inspired by American Thanksgiving, and pie, and Christmas, and gingerbread, and the holidays. You could say they are like the perfect holiday cookie! Plus they’re refined sugar free and you can easily make them gluten free using GF oats. But all that matters is they are delicious ~

1 cup pecans
1 cup oats
1/2 cup shredded coconut
1/4 cup coconut oil
1/4 cup maple syrup
1 tablespoon molasses
1 teaspoon vanilla
1/2 tsp baking powder
1 teaspoon ground ginger
1 teaspoon cinnamon
1/2 teaspoon nutmeg
Pinch of salt
Loving Earth caramel chocolate (optional)

Process pecans and oats together until they become a fine meal, then add in the rest of the ingredients and blend until a dough forms. Roll about 2 teaspoons of dough into a ball and flatten slightly, then put a whole pecan in the center. Bake at 170C for 8-10 minutes until lightly golden.
Let the cookies cool completely then drizzle with caramel chocolate.
