I recently discovered dried fruit & vegetable powders, and blackberry powder has this amazing magenta colour. I also had an old pink tie-dye shirt lying around, and because chocolate/food is always on my mind, I ended up with this↑! It was one of those rare times where the vision in my head actually worked out in real life hah
The blackberry powder adds a delicious subtle berry jam kinda flavour, they sort of remind me of lamingtons in a raw ball form!
Recipe~
1 cup nuts (I used ½ walnuts and ½ brazil nuts- can also replace ½ with oats for lower fat version)
1 cup pitted medjool dates
½ cup cacao powder
1 teaspoon vanilla
½ teaspoon salt
A few tablespoons of water
Process nuts/oats in a food processor until finely ground. Then add in the remaining ingredients with 1 tablespoon of water and process until a dough forms. You might need to add an extra tablespoon or two of water to help it come together. Roll into small truffles, then roll in the pink coconut or any other toppings like nuts or cacao nibs!
Pink coconut~
½ cup desiccated coconut mixed with 1 teaspoon blackberry powder (I purchased this from The Staple Store in Melbourne)
