Caramelised molasses banana porridge


If you love molasses like me, you will love this! If not, you won’t. But you could always replace the molasses with maple syrup and it will still be delicious.
Molasses is super high in iron, calcium and other minerals & vitamins, so along with the oats it’s a pretty nutritious and yum breakfast! 


Cook 1 cup of oats with non-dairy milk or water and a pinch of salt.

For the caramelised bananas:
1 sliced banana
1 tablespons molasses
1 tablespoon maple syrup
1/2 tsp each of cinnamon, nutmeg & ginger

Heat the molasses and maple in a small pan till it starts to bubble. Add in the bananas and sprinkle on the spices. Fry for 1-2 minutes on each side until golden.

Pour over oats and add coconut, nuts, berries or anything else you like !
