Nutmeg olive oil spelt cookies


1/2 cup light olive oil
3/4 cup raw sugar
1 flax egg (1 tablespoon ground flax seeds mixed with 1 tablespoon water)
3 tablespoons non-dairy milk
1 tsp vanilla
1 1/4 cups spelt flour
1 tsp nutmeg
1/2 tsp cinnamon
1 tsp baking soda
1 tsp salt
1/2 cup chocolate chips

Mix together oil, sugar, flax egg, milk and vanilla until caramelly and emulsified.
Fold in the flour, spices, baking soda, salt and choc chips.

Roll small balls of dough and flatten slightly on baking tray (not too much or they will over spread). Bake for 7-8 minutes at 170C until light golden around the edges. Let cool completely and enjoy with or without your fav ice cream! ❣
